I'm still wondering if we're going to have a game set in the Roman Empire! Because it has become a trend.
We know the next games will be on the 16th in Japan and the 17th in Germany. And if the rumors are true, AC Nebula will be on the Aztec empire, Mediterranean and India. I think it could focus on three different protagonists through the 16th century, the Spanish Conquistadores, the naval warfare between the Ottomans and hospitaliers, and Akhbar rule.
As we see in the previous sagas, Ubisoft focuses their games on the same era, more easy to reuse some assets and the story between the games is more relevant. (After the Desmond Saga, we had a focus on the colonial Americas with black flag and rogue, and also modern Europe in Unity and Syndicate. The Rpg games were set in Antiquity and the early Middle Ages with no shifting technological revolution.)
I think that the next few games will try to fill the two centuries between Ezio and the Kenways and explore new areas for the Assassins. Japan was regularly mentioned in the series but never explored, and Hexe will surely focus on the occult part of the series like Project Legacy and the Divine science. Maybe other games could focus on the Dutch Golden Age, travelling between Amsterdam and Southeast Asia; Isfahan during the 17th century; the African Gold Coast and the Ashanti empire; or the French Wars of Religion.
An Assassin's Creed: Mirage DLC that could be about Mesopotamian mythology and another set in Constantinople.

The first and second games that were announced are Assassin's Creed: Red (set during the Sengoku) and Assassin's Creed: Hexe (set during the Bamberg witch trials) but the third game which is Assassin's Creed: Invictus but we don't know where it will be set but according to the title it would be placed in the Roman Empire, the Fall of the Western Roman Empire, or during the Eastern Roman Empire.
The other game is Assassin's Creed: Nebula and it is supposed to be set in Mesoamerica, the Mediterranean, and India, it could be a platform like Assassin's Creed: Infinity due to the settings.
And the last ones on the list were games like Assassin's Creed: Raid (which by the title it could be set during the Sioux Wars) and Assassin's Creed: Echoes (it could be like Assassin's Creed: Revelations but at this time it could be about the Hidden Ones or the Isu).

Says that it will bring some characters such as Ezio, Kassandra, or Haytham but with a variety of levels, but here is what I think it could be:
An Anthology because it features some favorite characters, so it can tell about their aftermaths or a story that wasn't told in their game.
A Multiplayer game due that I feel that has the vibes of one.
A VR version of the games.
I have read this article and it made me think that Ubisoft might be part of a multiplayer game or part of Assassin's Creed: Infinity, but What they are about? Here goes my possible answer:
The game set in India is possibly about the Frye twins and Jayadeep's journey to the British Raj, the Hidden Ones in the Gupta Empire and the Chola dynasty, or the Mughal Brotherhood, India is a place full of History, so the possibilities can be infinite plus we can learn about the Assassins, Hidden Ones, Templars, Order of Ancients, and Proto-Assassins in India.
The game about the Aztecs or Mexica could be probably about the Fall of Tenochtitlan and the Spanish conquest of Mexico something that we saw in Assassin's Creed: Project Legacy, also it can tell about the origins of the Mexican Brotherhood and the Mexican Templar Rite.
And the game is set in the Mediterranean, the topics can be various like the Punic wars, the Fall of the Roman Empire, Justinian I's Renovatio imperii Romanorum, and the Italian Risorgimento.
